1 small onion (finely chopped)
2 tbsp - butter
2 lrg potatoes (finely diced)
8 cups fresh green, yellow, red beans (mixed, washed, snapped to 3/4" length)
7 - 8 cups of water
1 1/2 tsp herbs de provence
6 - 8 slices bacon (fried and chopped into pieces)
3 dashes of Red Hot Sauce
Sautée onions in melted butter
Add potatoes, mixed beans, herbs, salt and pepper to taste and water
cover and bring to a boil
Simmer medium for 20 - 25 minutes
Add chopped bacon & red hot sauce
Make sauce with 4 heaping tbsp of flour and 3/4 cup of milk
Cover and shake
Slowly add to bean mixture, stirring to thickness desired
(do not bring to a boil)
