2 1/2 lbs of shoulder veal chops
2 cups of well seasoned tomato sauce
1 beaten egg
3 tbsp of butter
6 slices of mozzarella cheese
1/2 cup bread crumbs
1/2 cup of grated parmesan cheese
1/4 tsp salt
1/4 tsp of paprika
Mix bread crumbs, parmesan, salt and paprika
Dip chops into the egg and roll into crumbs
Brown the chops in butter on both sides
cover each with sliced cheese
Pour sauce over top of chops
Cover and simmer for 45 minutes
Serve
