Recipes for VEGGIE CHIPS

Any vegetable that can be cut thin (carrots, eggplant, potato, zucchini etc..)
2 eggs
1 pkg shake n' bake (extra crispy works best)

Skin and cut thin chip slices with the vegetables
Dip in beaten egg mixture, coat both sides in shake n' bake
Arrange in single layer on baking sheet
Bake at 350 for about 25 minutes or until crispy
Serve with ranch dressing for dip
