1 - 8oz can of tomato sauce
1/4 cup cup of vegetable oil
1 1/2 tsp of chili powder
1 tsp of paprika
1/4 tsp of garlic powder
1/4 tsp of cayenne pepper
4 - 1 pound cornish game hens, halved

Combine all ingredients in small bowl except game hens
Brush tomato mixture over game hens
Grill over medium hot 45-50 minutes or until fork tender

Zucchini Chili Ingredients:


1 medium zucchini chopped fine
1/4 cup of oil
2 lb of ground beef
1 medium onion chopped

1 8oz can of kernel corn
2 cups of kidney beans
1/4 cup of chilli powder
1 small can of tomato paste
1 cup of water

Zucchini Chili Directions:


Fry the zucchini in oil until tender
Remove and set aside
Add beef, onion, green pepper to pan
Brown all in any leftover oils from zucchini
Add zucchini and rest of ingredients and stir well
Simmer for 2 hours, adding water if needed

Any vegetable that can be cut thin (carrots, eggplant, potato, zucchini etc..)
2 eggs
1 pkg shake n' bake (extra crispy works best)

Skin and cut thin chip slices with the vegetables
Dip in beaten egg mixture, coat both sides in shake n' bake
Arrange in single layer on baking sheet
Bake at 350 for about 25 minutes or until crispy

Recipes for VEGETABLE LASAGNA

1 package lasagna noodles (cook as directed)
2 cups chopped carrots
2 cups chopped red bell peppers
1 cups chopped green bell peppers
1 cup chopped mushroom
1 cup chopped onion
1 1/2 lbs grated mozzarella
4 tbsp all purpose flour
3 cups milk
1 cup grated parmesan cheese
2 tsp salt and pepper
1/2 cup butter
1 - 8oz can tomato paste
2 - 8oz cans tomato sauce
1 - 28 oz can of crushed tomatos
1/2 cup water
1 tbsp italian seasoning


Vegetable mix :
Add tomato paste, tomato sauce and tomatos
Add other vegetables
Add water and seasoning, mix well
Cook until tender


Cheese sauce:
1 medium onion finely chopped
1/2 cup of butter
Fry until onion is translucent
Add 4 tbsp flour, cook til browning
Add 3 cups milk
1 cup grated parmesan cheese
2 tsp salt and pepper
Cook low until it thickens

Layers:

Use a 9" x 13" baking pan
Place a thin layer of vegetable sauce on bottom of baking pan
Add 1 layer of noodles
Spread remainder of vegetable sauce
Add 1 1/2 lbs of grated mozzarella
Place another layer of noodles
Top with cheese and cheese sauce
Serve

Recipes for VEAL PARMIGIANA

2 1/2 lbs of shoulder veal chops
2 cups of well seasoned tomato sauce
1 beaten egg
3 tbsp of butter
6 slices of mozzarella cheese
1/2 cup bread crumbs
1/2 cup of grated parmesan cheese
1/4 tsp salt
1/4 tsp of paprika

Mix bread crumbs, parmesan, salt and paprika
Dip chops into the egg and roll into crumbs
Brown the chops in butter on both sides
cover each with sliced cheese
Pour sauce over top of chops
Cover and simmer for 45 minutes
Serve

Recipes for TOMATO & POTATO SOUP

4 cups of peeled, cubed potatoes
2 cups of milk
2 minced garlic cloves
1 1/2 cups of chopped celery
1 1/2 cups of chopped carrots
1 1/4 cups of chicken broth
2 tbsp butter
2 tbsp tomato paste
1 tbsp of itallian seasoning
1 tbsp cornstarch
1 19 oz can of tomatos
Salt and papper to taste

Melt butter in large saucepan
Add onions and cook over medium heat until tender
Add celery, carrots, potatoes, garlic and seasoning
Cook for 5 minutes
Stir in cornstarch and add milk stirring while cooking until thick
Add tomatoes, paste and broth
Return to a boil and simmer for 20-25 minutes
Season and serve

Recipes for SPICY MEATBALLS

Meatballs:
1 pound of lean ground beef
1/4 teaspoon of ground pepper
2 tbsp of worcestershire sauce
1/2 tspn garlic salt
1 egg
1/4 cup finely chopped onion
2 tablespoon cooking oil
Combine all ingredients besides oil
Shape into roughly 1" meatballs
Heat oil in skillet
Add meatballs cooking until all sides are browned

Sauce:
1 1/2 tspn butter
2 tbsp finely chopped onion
1/2 cup of ketchup
1/2 cup of tomato juice (spicy)
1 tspn of worcestershire sauce
1/4 tspn of garlic salt
3 tbsp of parmesan cheese
Simmer the sauce for 20 minutes
Place meatballs into a casserole dish
Cover meatballs with sauce
Cook for 45 minutes @ 325F
